Carrot juice is known for having a high amount of nutrients that are good for your eyes. For instance, one cup (250 ml) packs more than 250% of the DV for vitamin A. It is in the form of provitamin A carotenoids, such as beta carotene. Vitamin A is said to be very good for eye health. Many studies link the intake of vegetables and fruits containing provitamin A with a reduced risk of blindness.

Did you know? Carrot juice is known for being a great source of zeaxanthin and lutein. These are two carotenoids that accumulate in our eyes and protect them from harmful light. Taking them in a high amount may reduce the eye issues like age-related macular degeneration (AMD).

 

Immunity: 

Another benefit of carrot juice is that it may help in boosting immunity. The reason behind this is that carrot juice contains vitamin A as well as C. They can act as antioxidants to shield immune cells from free radical damage. In addition, carrot juice is known for being enriched in vitamin B6. It can provide more than 30% of the DIV in a single cup (240 ml). 

Vitamin B6 is also necessary for an optimal immune response. Additionally, its deficiency is associated with weakened immunity.

It is because purple carrot juice contains anthocyanin pigments that have anti-inflammatory effects. 

Carrot juice is known for having a low glycemic index (GI). GI refers to a measure of how much a particular food can increase blood sugar levels. Foods and beverages with low glycemic content can be helpful in improving blood sugar management for diabetics.

 

Heart Health:

Carrot juice contains carotenoids that are thought to be key in promoting liver  health. According to one study, the antioxidant and anti-inflammatory effects of carotenoids may be beneficial in this effort. It can be helpful in protecting against non-alcoholic fatty liver disease (NAFLD) which can occur when fat ends up accumulating on the liver due to obesity, excess weight, or poor diet.
